Adam's stuffed tomatoes

    Tasty tomatoes stuffed with courgettes red onion, bacon and mushroom topped with parmesan cheese.

    Serves: 4 

    • 4 large tomatoes
    • 1 large courgette, chopped
    • 1 large red onion, chopped
    • 6 rashers of smoked streaky bacon, chopped
    • 2 large mushrooms, chopped
    • a good handful of grated parmesan cheese
    • 1 tablespoon of cooking oil

    1. Preheat your oven to 220 C / Gas 7.
    2. Heat the oil in a frying pan and add the bacon and onion; fry until the onion starts to soften and the bacon is almost cooked, then add the chopped courgettes and mushrooms and fry until they soften.
    3. Wash your tomatoes and slice the tops off as close to the top as possible scoop out the inside (get out as much as you can) and discard or use for something else.
    4. Now fill the hollow tomatoes with the fried mix (really stuff it in!). Top with the grated parmesan cheese.
    5. Place on a baking tray and bake in the preheated oven for 15-20 minutes until the parmesan is golden. Yummy!
