    About this recipe: A super-delicious Chinese spare rib dish. Pork spare ribs are braised in a spicy sauce with onions. If the sauce is too thin for your liking, add a little bit of cornflour and water to thicken it. Enjoy over freshly cooked rice.

    Ingredients
    Serves: 5 

    • 2 tablespoons vegetable oil
    • 1 (1.5cm) piece fresh ginger, sliced
    • 1/4 teaspoon Sichuan peppercorns
    • 500g pork spare ribs, chopped into 2.5cm pieces
    • 1 tablespoon chilli bean paste
    • 1/2 teaspoon soy sauce
    • 1 teaspoon salt
    • 1 whole star anise
    • 6 tablespoons water
    • 2 onions, thinly sliced

    Method
    Prep:15min  ›  Cook:35min  ›  Ready in:50min 

    1. Heat the oil in a wok over high heat. Add the ginger and peppercorns and stir-fry. When fragrant, add the spare ribs and stir-fry until the meat turns light pink.
    2. Add the chilli-bean paste, soy sauce and salt and stir thoroughly. Add the star anise and water; stir. Cover the wok and cook over the medium heat for about 25 minutes until the ribs are well done and the water is almost dry.
    3. Add the onion and stir-fry for a few minutes. Transfer to a dish and serve.

    is there a necessity of bringing a pot of water to boil, mix in the pork ribs, ginger etc and take off the scum on top, let boil for abt 30mins to make it soft and easily to stir fry afterwards?  -  10 Oct 2016  (Review from Allrecipes AU | NZ)
