About this recipe: A simple, yet delectable Chinese stir fry. Prawns are stir-fried with ginger, chillies, rice wine and black vinegar, before being garnished with spring onions.


Makes: 3 - 4 servings

  • 2 tablespoons vegetable oil
  • 1 (1.5cm) piece fresh ginger, sliced
  • dried chillies, to taste
  • 1kg raw large prawns, peeled, deveined, rinsed and patted dry
  • 2 teaspoons rice wine or to taste
  • salt, to taste
  • sugar, to taste
  • black vinegar, to taste
  • water, as needed
  • 2 spring onions, chopped

  1. Heat the oil in a wok over high heat. Add the ginger and dried chillies and stir-fry until fragrant. Add the prawns and stir-fry until they turn pink.
  2. Add rice wine, salt, sugar and black vinegar and toss. Turn the heat down to medium. Add a little bit of water and cook for about 2 minutes.
  3. Garnish with spring onions before serving.


Rice wine (sake) and black vinegar can be purchased in Chinese/Oriental speciality shops.
