Braised Chicken Wings with a Secret

    These chicken wings are succulent, tender and packed full of flavour. Chicken wings are simmered with star anise, ginger and cola (the secret ingredient).

    Serves: 4 

    • 4 teaspoons groundnut oil
    • 2 teaspoons sugar
    • 400g chicken wings, lightly scored with a sharp knife and cut at the joints
    • 1 (330ml) tin cola
    • 2 teaspoons finely chopped ginger
    • 2 petals star anise
    • 1 teaspoon soy sauce
    • 1 teaspoon salt
    • 2 teaspoons finely chopped spring onions

    1. Heat the oil in a wok over high heat. Add the sugar and stir until it dissolves.
    2. Add the chicken wings and stir-fry until lightly browned. Add cola, ginger, star anise, soy sauce and salt.
    3. Turn the heat down to medium-low and simmer until the sauce is thick and the wings are tender.
    4. Scoop out the wings and place onto a serving dish, scatter with spring onions and serve.
