Stir-Fried Pork and Fresh Peas

    This is a delicious Chinese stir fry, which is quick and easy to make. Sweet and tender fresh peas are stir-fried with marinated pork. Enjoy with freshly cooked rice.

    Serves: 4 

    • 200g pork fillet, cut into small chunks
    • 1 teaspoon rice wine
    • 1/4 teaspoon sugar
    • 2 teaspoons light soy sauce
    • 1/4 teaspoon salt
    • 3 tablespoons cooking oil, divided
    • 400g shelled fresh peas
    • 1/4 teaspoon salt

    1. Combine the pork with rice wine, sugar, light soy sauce and 1/4 teaspoon salt. Mix well and set aside.
    2. Heat 1 tablespoon oil in a wok over high heat. Add peas and stir-fry for 3 minutes, remove and set aside.
    3. Wipe the wok clean and heat the remaining oil over high heat. Stir-fry the pork for about 6 minutes or until cooked through, then stir in the peas and continue cooking for 4 minutes more. Season with salt and serve.
