Simple Stir-Fried Prawns

    This is a delicious dish, which is quick and easy to make. Prawns are stir-fried with a sauce made with passata, salt, sugar, pepper and shaoxing wine.

    Serves: 4 

    • 250ml fish stock
    • passata to taste
    • monosodium glutamate (MSG) to taste
    • salt to taste
    • sugar to taste
    • ground white pepper to taste
    • vegetable oil as needed
    • 725g raw prawns, peeled, deveined and sliced in half horizontally
    • shaoxing wine to taste
    • sesame oil to taste

    1. Mix the stock with the passata, MSG, salt, sugar and white pepper in a bowl to form the sauce.
    2. Heat some oil in a wok over high heat until very hot. Stir-fry the prawns until the wok is almost dry. Add the shaoxing wine and sauce and stir.
    3. Continue to cook until the sauce is coating the prawns. Sprinkle with sesame oil. Transfer to a dish and serve.
