About this recipe: This is a traditional Chinese breakfast dish. It's also known as rice porridge. Rice is simmered until soft and mushy, then stirred with shredded roast duck, lettuce and peanuts.


Makes: 3 - 4 servings

  • 250g white rice, rinsed
  • 2 litres water or more if needed
  • 100g roasted duck meat, shredded
  • 30g peanuts, fried until golden and crunchy
  • 50g lettuce leaves, finely chopped
  • sesame oil to taste
  • salt to taste

  1. Place the rinsed rice into a large stock pot. Add the water and bring to the boil over high heat.
  2. Partially cover the pot, lower the heat and simmer for about 15 minutes or until the rice is soft.
  3. Add the duck and cook for an additional 10 minutes. Add the peanuts and lettuce.
  4. Turn the heat to high and bring back to the boil. Sprinkle sesame oil and salt to taste. Serve.
