Sugared Tomatoes

    This is a light, simple and nutritious dessert. It's best made in the summer, when tomatoes are in-season. Peeled tomatoes are tossed with sugar, allowed to chill and then served.

    Ingredients
    Serves: 2 

    • 2 (150g) whole tomatoes
    • 2 tablespoons sugar

    Method
    Prep:10min  ›  Extra time:30min chilling  ›  Ready in:40min 

    1. Blanch the tomatoes and peel the skin. Cut each tomato into 6 wedges.
    2. Place the tomatoes in a big bowl, add sugar and lightly toss. Place the bowl into the refrigerator for 30 minutes.
    3. Arrange the tomato wedges on two small dishes and serve.
