About this recipe: This delicious egg dish is packed full of flavour. It's also quick and easy to make. Beaten eggs are scrambled with green chillies and diced tomatoes.


Serves: 2 - 4

  • 2 tomatoes
  • 1 1/2 tablespoons cooking oil
  • 6 eggs, beaten until fluffy
  • 2 green chillies, seeded and cut into 1cm pieces
  • salt and sugar to taste

  1. Blanch the tomatoes and peel the skin. Seed and cut into 1cm cubes.
  2. Heat the oil in a wok over high heat. Pour in the beaten eggs and fry for a little while and stir.
  3. Add the tomatoes and chillies; stir-fry for about 2 minutes.
  4. Season with salt and sugar, mix well and transfer to a serving dish.
