About this recipe:A colourful and delicious Chinese stir-fry dish. Preserved salted pork is stir-fried with pepper, Chinese celery and rice. It's a great way of making use of leftover rice.
1 tablespoon vegetable oil
1/2 yellow pepper, finely chopped
1 stick Chinese celery, leaves discarded and chopped into 1cm pieces
1 1/2 teaspoons salt
400g cold cooked rice, grains separated
100g cooked Chinese preserved salted pork, finely diced
monosodium glutamate (MSG) to taste

Heat the oil in a wok over high heat until hot. Add the peppers and celery and stir-fry until soft.
Add the salt and rice and stir for about 1 minute. Turn the heat down to medium, add the pork and stir well.
Stir-fry the pork until the fat from the pork is rendered. Season with MSG and transfer to a serving dish.
Monosodium glutamate, Chinese celery and preserved salted meat can be purchase in Chinese/Oriental speciality shops. If Chinese celery is unavailable, use ordinary celery. If preserved salted meat is unavailable, use streaky bacon.
