Fiery Stir-Fried Chillies

    If you like your food spicy, you will love this dish. Chillies are stir-fried with spring onions, ginger, garlic and seasonings. It goes well with a bowl of freshly steamed rice.

    Serves: 4 

    • 5 tablespoons oil
    • 400g green chillies, seeded and chopped
    • 2 spring onions, finely chopped
    • 1 (2cm) piece fresh ginger, finely chopped
    • 2-3 cloves garlic, finely chopped
    • 1 teaspoon salt
    • monosodium glutamate (MSG) to taste
    • 1 teaspoon sugar
    • 1 tablespoon black vinegar
    • dark soy sauce to taste
    • oyster sauce to taste
    • sesame oil for drizzling

    1. Heat oil in a wok over high heat. Stir-fry the chillies for 1 minute, set aside and drain all but 1 tablespoon oil.
    2. Heat the reserved oil in the wok until hot, then stir-fry the spring onions, ginger and garlic until fragrant.
    3. Add the chillies and stir-fry until dark and light brown spots appear on the surface.
    4. Stir in the salt, MSG, sugar, black vinegar, dark soy sauce and oyster sauce and stir for a few minutes to allow flavours to penetrate into the chillies.
    5. Drizzle with sesame oil and serve.


    Monosodium glutamate and black vinegar can be purchased in Chinese/Oriental speciality shops or online.
