Spicy Chinese Okra

    This is a mouth-numbing side dish, which is perfect with white rice. Silk squash (also known as Chinese okra) is stir-fried with ginger and hot green chillies.

    Serves: 3 - 4

    • 50g hot green chilli peppers, seeded and julienned
    • 2 tablespoons vegetable oil
    • 1/2 teaspoon finely chopped fresh ginger
    • 2 fresh silk squash, peeled, seeded and cut into thick slices
    • 1 teaspoon salt
    • 1/8 teaspoon monosodium glutamate (MSG)

    1. Heat a wok and add the green chillies. Dry-fry until light brown in colour and set aside.
    2. Wipe the wok clean and add the oil over high heat. When the oil is hot, stir-fry the ginger until fragrant.
    3. Add the squash and stir-fry until almost cooked. Stir in the chillies and mix well.
    4. Add the salt and stir-fry until all ingredients are well cooked. Season with MSG and serve.


    Silk squash are also known as Chinese okra and silk melon. You can find them in Chinese/Oriental speciality shops. If unavailable, you can use courgettes instead.
