Chinese mung bean dessert

    This is a deliciously different dessert, made by simmering together mung beans, pearl barley, white rice and rock sugar. This dish is also great as a snack.

    Serves: 2 

    • 1/2 cup mung beans, soaked for 1 hour and drained
    • 2 tablespoons pearl barley, rinsed
    • 1/2 cup white rice, rinsed
    • 2 lumps rock sugar

    1. Cook over low heat for about 1 hour until the mung beans open up. Add the rock sugar and cook until dissolved. Serve.
    2. Combine mung beans, barley and rice in a saucepan. Add at least 8 times as much water as the dry ingredients.
    3. Bring the water to the boil and turn down the heat and cover the pan.


    Rock sugar can be purchased in Chinese/Oriental speciality shops or online. Alternatively, you can use sugar to taste.
