Spicy Pork and Potato Stir Fry

About this recipe: This is a simple and delicious dish, which is easy to make. Potatoes are stir-fried with pork, spring onions and chillies. Enjoy with freshly cooked rice, if desired.


Serves: 3 - 4

  • 1 tablespoon cooking oil
  • 500g potatoes, peeled and thinly sliced
  • 2 tablespoons cooking oil
  • 2 dried red chillies
  • 5 Sichuan peppercorns
  • 3 green chilli peppers, seeded and julienned
  • 100g lean pork, thinly sliced
  • 1 teaspoon soy sauce
  • 1/2 teaspoon rice wine
  • 2 spring onions, green and white parts separated, chopped into 2.5cm lengths
  • salt to taste
  • chicken stock granules to taste

  1. Heat 1 tablespoon oil in a wok over high heat, until hot. Stir-fry the potatoes until soft. Remove and set aside.
  2. Heat 2 tablespoons oil in the same wok until hot. Stir-fry the dried chillies and peppercorns until fragrant. Remove the chillies and peppercorns and discard.
  3. Add the green chillies and fry until soft. Transfer to a dish and set aside. Reserve the oil in the wok.
  4. Combine the pork with soy sauce, rice wine and white parts of the spring onion. Re-heat the oil and stir-fry the pork for 2 minutes.
  5. Add the potatoes and chillies back into the wok and stir. Season with salt and chicken stock granules. Garnish with the green parts of the spring onions and serve.


Sichuan peppercorns and rice wine can be purchased in Chinese/Oriental speciality shops or online.
