About this recipe: This simple Chinese salad has the perfect combination of flavours and textures. Preserved duck eggs are tossed with tofu, coriander, spring onions and garlic.


Serves: 4 

  • 2 preserved duck eggs, shelled and cut into small cubes
  • 200g firm tofu, sliced into 2cm pieces
  • 2 tablespoons chopped coriander
  • 2 spring onions, finely chopped
  • 1 teaspoon salt
  • 1 teaspoon Chinese black vinegar
  • 2 cloves garlic, finely chopped
  • 1/2 teaspoon sesame oil

  1. Lay the tofu and preserved duck eggs in the bottom of a large dish.
  2. Drizzle with black vinegar and sesame oil. Sprinkle with salt, garlic, spring onions and coriander.
  3. Toss lightly before serving.


Preserved duck eggs are also known as thousand-year old eggs. These eggs and Chinese black vinegar can be purchased in Chinese/Oriental speciality shops.
