Steamed Salted Fish in Black Bean Sauce

    A simple and delicious Chinese dish. Salted fish is steamed with a black bean sauce, chillies, spring onions and ginger. Enjoy with freshly cooked white rice.

    Serves: 4 

    • 3 1/2 tablespoons cooking oil
    • 100g salted fermented black beans
    • 2 teaspoons rice wine
    • 1/4 teaspoon monosodium glutamate (MSG)
    • 400g dried salted fish fillet, washed and cut into slices
    • 1 spring onion, cut into 2cm lengths
    • 1 (2.5cm) piece fresh ginger, thinly sliced
    • 5 dried red chillies, cut into quarters

    1. Lay the fish on a heat-proof dish and set aside.
    2. Heat the oil in a wok until hot. Stir-fry the black beans for 1 minute or until fragrant. Add the rice wine and MSG and stir-fry for 20-30 seconds.
    3. Pour the black bean sauce over the fish, scatter with spring onions, ginger and dried chillies.
    4. Steam for 25 minutes. Remove and cool. Serve.


    Salted fermented black beans, rice wine, monosodium glutamate, dried salted fish and dried chillies can be purchased in Chinese/Oriental speciality shops.
