Drunken Chicken Wings

    These Chinese chicken wings are packed full of flavour and easy to make. They are simmered, then allowed to steep in a seasoned Shaoxing wine marinade.

    Makes: 2 - 3 servings

    • 200g chicken wings
    • sliced ginger to taste
    • chopped spring onion to taste
    • water as needed
    • salt to taste
    • sugar to taste
    • monosodium glutamate (MSG) to taste
    • 3 tablespoons Shaoxing wine

    1. Blanch the chicken wings in boiling water for 1 minute. Drain and set aside.
    2. Place the ginger, spring onions and chicken wings in a saucepan and add just enough water to just cover the wings.
    3. Bring to the boil over high heat and skim off any scum that forms at the surface. Turn the heat down and cover the pan.
    4. Simmer for 10 minutes or until the wings are cooked through. Remove from the pan and set aside. Reserve half of the chicken simmering liquid.
    5. Mix the reserved chicken simmering liquid with salt, sugar, MSG and Shaoxing wine in a bowl. Let cool to room temperature.
    6. Once the liquid is cool, add the chicken wings and marinate for at least 30 minutes.
    7. Remove the wings from the marinade and chop into small bite-sized pieces. Place on a plate and serve.


    Shaoxing wine and monosodium glutamate can be purchased in Chinese/Oriental speciality shops.
