Soya bean sprout salad

    This popular Oriental dish has the perfect combination of flavour and texture. Soya bean sprouts are stir-fried with aromatic seasonings, allowed to cool and then served. Enjoy as a cold starter.

    Serves: 3 - 4

    • 1 tablespoon vegetable oil
    • 400g soya bean sprouts, trimmed, rinsed and drained
    • 1/2 teaspoon salt
    • 1 1/2 tablespoons toasted black sesame seeds
    • 1 tablespoon sesame oil
    • 2 teaspoons finely chopped garlic
    • 2 spring onions, cut into 2.5cm lengths
    • 1 teaspoon light soy sauce
    • 1 tablespoon water

    1. Heat the oil in a frying pan until hot. Stir-fry the bean sprouts and salt for 3 minutes over high heat.
    2. Add the black sesame seeds, sesame oil, garlic, spring onions, light soy sauce and water. Stir-fry for 2 minutes more.
    3. Turn the heat down to low and continue to stir-fry for another 2 minutes. Allow to cool to room temperature or chill for 30 minutes, serve.


    Toasted black sesame seeds and soya bean sprouts can be purchased in Chinese/Oriental speciality shops. If soya bean sprouts are unavailable, use ordinary beansprouts.
