Steamed Chinese Pork with Salted Eggs

About this recipe: This is a traditional Chinese favourite. Seasoned pork mince is steamed with salted duck eggs. Serve with freshly cooked rice, if desired.


Makes: 2 - 3 servings

  • 300g boneless and skinless pork, chopped until minced
  • 1 teaspoon salt
  • 1/4 teaspoon monosodium glutamate (MSG)
  • 2 salted duck eggs, separated
  • 1 1/2 tablespoons cornflour
  • 1/4 teaspoon ground white pepper
  • 1 1/2 tablespoons groundnut oil
  • water as needed
  • 1 1/2 teaspoons soy sauce
  • chicken stock as needed

  1. Combine the pork with salt, MSG, 1 tablespoon salted egg white, cornflour, pepper, groundnut oil and a little bit of water and mix well. Shape into a thick burger and transfer to a heat-proof dish.
  2. Lightly spread the egg yolks over the pork. Steam over medium heat for at least 30 minutes or until cooked through.
  3. Meanwhile, mix together a little chicken stock with soy sauce. Drizzle this sauce over the pork when cooked. Serve immediately.


Salted duck eggs and monosodium glutamate can be purchased in Chinese/Oriental speciality shops.

Cook's note

You can use minced pork if you wish. However, hand-chopped pork will give a better texture.
