Steamed Scallops with Winter Melon

    A simple, delicious and low fat Chinese dish. Winter melon is steamed with scallops in a garlic sauce. Enjoy with freshly cooked rice, if desired.

    Makes: 3 - 4 servings

    • 500g winter melon, peeled, seeded and cut into 3cm thick slices
    • 250g fresh scallops
    • 2 cloves garlic, finely chopped
    • 2 tablespoons chicken stock
    • 1 teaspoon salt

    1. Blanch winter melon in boiling water for about 2 minutes and drain.
    2. Transfer melon on a heat-proof dish. Top with the scallops and garlic.
    3. Place the dish into a steamer and steam for about 10 minutes. Meanwhile, make the sauce by mixing together the salt and chicken stock.
    4. Once the scallops are done, drizzle with the sauce and serve immediately.


    Chinese winter melon can be purchased in Chinese/Oriental speciality shops. If winter melon is unavailable, substitute in bitter melon, but salt for 30 minutes before using.
