About this recipe: A quick and easy dish, which has the perfect combination of flavours and textures. Chinese sausage is stir-fried with mangetout and seasoned with salt. Enjoy with rice, if desired.


Serves: 4 

  • 3 teaspoons vegetable oil, divided
  • 500g mangetout, topped and tailed
  • 3 Chinese sausage (lap cheung), sliced into 1cm rounds
  • 1/2 teaspoon salt

  1. Heat 2 teaspoons oil in a wok until hot. Stir-fry the mange-tout over high heat for 1-2 minutes, set aside.
  2. Add the remaining oil to the wok and heat until hot. Stir-fry the Chinese sausage over medium heat for 2 minutes.
  3. Return the mangetout back into the wok and stir-fry for 2 minutes more. Season with salt and serve.


Chinese sausages can be purchased in Chinese or Oriental speciality shops.
