Chinese Okra and Soya Bean Stir Fry

    Silk squash is also known as Chinese okra, which is a refreshing vegetable. Here it is stir-fried with fresh soya beans. Enjoy as a side dish or main course.

    Serves: 4 

    • 400g silk squash, peeled, cut into 3cm sections, then cut into quarters
    • 250g fresh soya beans
    • 1/4 tablespoon salt
    • 2 tablespoons vegetable oil

    1. Heat 1 tablespoon oil in a wok until hot over medium heat. Add the soya beans and cook for 8 minutes or until the skins start to separate from the beans. Set aside.
    2. Wipe the wok clean. Heat the remaining oil in the wok until hot. Stir-fry the silk squash pieces over high heat for 10 minutes until soft.
    3. Add the cooked soya beans and salt and stir-fry for about 5 minutes. Transfer to a dish and serve.


    Fresh soya beans and silk squash (also known as Chinese okra and silk melon) can be purchased in Chinese/Oriental speciality shops. If silk squash is unavailable, use courgettes instead.
