About this recipe: This side dish has the perfect combination of flavours and textures. Sweetcorn kernels are stir-fried with seasonings, then tossed with toasted pine nuts.


Serves: 4 

  • 150g pine nuts
  • 2 tablespoons vegetable oil
  • 300g sweetcorn kernels
  • 1/2 teaspoon salt
  • 1/4 chicken stock granules
  • 1/4 teaspoon cornflour, mixed with 2 teaspoons water

  1. Dry-roast the pine nuts in a frying pan over medium heat. Set aside.
  2. Heat the oil in a wok until hot. Stir-fry the sweetcorn, season with salt and chicken stock granules.
  3. Add the cornflour slurry, stir and toss with pine nuts. Serve
