About this recipe: Water spinach is a common vegetable in the Phillipines. It's high in nutrients, vitamins and minerals. Here it is stir-fried with garlic, spring onions and salt. Serve as a side dish.


Serves: 3 - 4

  • 1/2 tablespoon cooking oil
  • 1 spring onion, cut into 3cm lengths
  • 2 cloves garlic, finely chopped
  • 500g water spinach, chopped into 3cm lengths
  • salt to taste
  • sesame oil to taste

  1. Heat the oil in a wok over high heat until very hot. Stir-fry the spring onion and garlic for 15 seconds.
  2. Add the water spinach and stir-fry for 1 minute or until the leaves are wilted.
  3. Season with salt and stir. Sprinkle with sesame oil and toss. Serve.


Water spinach can be purchased in Chinese/Oriental speciality shops. If unavailable, substitute in spinach or watercress.
