Walnut and Red Bean Paste Cake

    This cake is simple and delicious! Cake batter is made with glutinous rice flour, which is topped with red bean paste, more cake batter, walnuts and sesame seeds.

    Serves: 4 

    • 450g glutinous rice flour
    • 3 1/2 tablespoons vegetable oil
    • 3 1/2 tablespoons sugar
    • 2 teaspoons bicarbonate of soda
    • 6 tablespoons milk
    • 100g sweet red bean paste
    • 3 eggs
    • 100g walnuts
    • 2 teaspoons sesame seeds

    1. Preheat the oven to 180 C / Gas 4.
    2. Combine glutinous rice flour, oil, sugar, eggs, milk and bicarbonate of soda in a big bowl. Mix well to form a batter.
    3. Pour half of the batter into a cake tin and place the tin in the oven and bake for 15 minutes.
    4. Take the tin out and spread the red bean paste evenly over the semi-baked cake.
    5. Pour the remaining batter over the red bean paste. Scatter the walnuts and sesame seeds over the top.
    6. Return the cake tin in the oven and continue baking for 45 minutes. Cool and serve.


    Glutinous rice flour and red bean paste can be purchased in Chinese/Oriental speciality shops or online.
