About this recipe: Just four ingredients combine for a luscious watercress soup. If you can find fresh bunches of watercress in the market, even better - but a bag of watercress from the supermarket will taste fantastic too. You can also use veg or chicken stock instead of the water for richer flavour.


Serves: 4 

  • 200g watercress
  • 4 potatoes, peeled and diced
  • 250ml creme fraiche
  • 1 tablespoon butter
  • salt and freshly ground black pepper to taste
  • 1L water

  1. Heat the butter in a saucepan over medium heat; add the watercress and potatoes and cook for 5 minutes. Season with salt and pepper, add 1 litre of water and simmer for 20 minutes over medium heat. Put the soup in a blender or use a hand mixer to mix the soup.
  2. Stir in the creme fraiche just before serving.
