About this recipe: Just what it says on the box - a lovely and easy soup made with no less than six vegetables. Perfect for lunch or a light supper to get you to your five a day. This soup is smooth thanks to the courgettes. It is a good substitute for potatoes. Make this vegetarian by using a veg stock cube instead.


Serves: 2 

  • 2 carrots, diced
  • 1 turnip, diced
  • 1 leek, diced
  • 2 courgettes, diced
  • 1 small stick celery, diced
  • 2 tomatoes, diced
  • 1 garlic clove, chopped
  • 1 chicken stock cube
  • fresh thyme to taste
  • 1 fresh bay leaf

Prep:20min  ›  Cook:25min  ›  Ready in:45min 

  1. Bring 500ml of water to the boil in a saucepan. Add all ingredients to the saucepan.
  2. Cook for 25 minutes over medium heat. Puree for a smooth soup, or leave as is for more texture.
