Apricot and almond tart

    This is a fantastic fruit tart that will make you seem like a gourmet pastry chef, except it is super easy to make. Use all-butter puff pastry for best results, and if you don't have vanilla sugar simply add 1/2 teaspoon of vanilla extract instead.

    Serves: 6 

    • 1 sheet puff pastry
    • 100g butter
    • 100g caster sugar
    • 1 egg, beaten
    • 1 tablespoon vanilla sugar
    • 500g apricots, stones removed and diced
    • 125g ground almonds

    1. Preheat the oven to 200 C / Gas 4.
    2. Butter and dust a tart tin with flour. Line with the puff pastry sheet.
    3. Melt the butter into a saucepan over medium heat. Pour it into a bowl. Add the sugar, beaten egg and vanilla sugar then mix.
    4. Sprinkle the ground almonds onto the puff pastry. Layer the apricots over the ground almonds, then pour the egg mixture over the apricots.
    5. Bake in the oven for approximately 30 minutes.
