I love apricots. This quick apricot compote is easy to make and can be enjoyed with yoghurt and muesli for breakfast, or can be served as a pudding with creme fraiche or ice cream. If you don't have apricot brandy, use regular brandy instead.

12 apricots, stones removed and chopped
2 teaspoons apricot brandy
80g granulated sugar

Melt the butter in a saucepan over medium heat. Add the apricots, apricot brandy and sugar. Cover and cook on low heat for 10 minutes.
Remove from heat and pour the compote into a jar. Cool for a few minutes and then refrigerate till needed.
