About this recipe: I love apricots. This quick apricot compote is easy to make and can be enjoyed with yoghurt and muesli for breakfast, or can be served as a pudding with creme fraiche or ice cream. If you don't have apricot brandy, use regular brandy instead.


Serves: 4 

  • 1 knob of butter
  • 12 apricots, stones removed and chopped
  • 2 teaspoons apricot brandy
  • 80g granulated sugar

Prep:10min  ›  Cook:10min  ›  Ready in:20min 

  1. Melt the butter in a saucepan over medium heat. Add the apricots, apricot brandy and sugar. Cover and cook on low heat for 10 minutes.
  2. Remove from heat and pour the compote into a jar. Cool for a few minutes and then refrigerate till needed.
