About this recipe: My family loves asparagus and I often make this recipe. When I want some variety, I use a mix of white and green asparagus. I got not only a colourful dish but a delicious one too!


Serves: 4 

  • 500g asparagus, washed and peeled
  • For the sauce
  • 2 tablespoons mustard
  • 2 boiled eggs, chopped
  • 1 tablespoon oil
  • 1 shallot, minced
  • 1 tablespoon red wine vinegar
  • 3 tablespoons natural yoghurt
  • 2 tablespoon chives, chopped
  • 5 cornichons, chopped
  • salt and pepper to taste

  1. Prepare the sauce by mixing all ingredients well. Refrigerate until ready to use.
  2. Add the asparagus to a saucepan, cover with boiling water, add salt then cook over medium heat until tender, or for about 15 minutes.
  3. Cool until warm, serve with the Gribiche sauce.
