About this recipe: A delicious, simple quiche recipe. It is possible to use a different kind of cheese for this quiche. The onions go perfectly well with a cheese like Comté - but you can also use slices of goat's cheese. In that case, place the goat cheese on the quiche just before baking it.


Serves: 4 

  • Shortcrust pastry
  • 250g plain flour
  • 125g softened butter
  • 1 teaspoon salt
  • 50ml water
  • Quiche filling
  • 2 tablespoons olive oil
  • 500g onions, sliced
  • 80g bacon, diced
  • 4 eggs
  • 100ml milk
  • 200ml creme fraiche
  • 100g grated Comté cheese

  1. Start by preparing the shortcrust pastry: In a large bowl, add flour then butter and salt, mix well then stir in 50ml of water.
  2. Form a ball with the dough, wrap in cling film and refrigerate for 30 minutes.
  3. Preheat the oven to 190 C / Gas 5.
  4. Roll the pastry out on a floured work surface, then line it in a 25cm diameter buttered pie dish.
  5. Prick the pastry with a fork. Cover with baking parchment, then add dry beans and bake for 12 minutes.
  6. Meanwhile, start preparing the filling: Heat the olive oil in a frying pan over medium heat. Add the onions and bacon and cook for 7 to 8 minutes, stirring regularly.
  7. Remove the pastry case from the oven (leave the oven on). Remove the parchment and the beans. Spoon the onion mixture over the pastry case.
  8. In a bowl, beat the eggs, then add the milk, cream and Comté. Pour onto the pastry case and bake for 25 minutes.
  9. The quiche should be golden brown. Serve warm or hot.
