About this recipe: These filo triangles are vegetarian and baked in the oven. They are so easy to do that you can prepare them in a flash when you have unexpected guests... You can also freeze them unbaked, then pop them in the oven straight from the freezer as needed - just increase the cooking time.


Serves: 4 

  • 1 packet filo pastry
  • 250g frozen spinach, thawed and squeezed dry
  • 250g ricotta cheese
  • 2 eggs
  • 2 teaspoons dried basil
  • 2 tablespoons olive oil
  • salt and pepper to taste

  1. Preheat oven to 180 C / Gas 4.
  2. Mix the ricotta cheese, spinach, eggs, basil, salt and pepper.
  3. Lay a filo sheet on a work surface, pour a spoonful of the spinach and cheese mixture on it and fold into a triangle. Continue with the remaining ingredients.
  4. Put the triangles on a parchment-lined baking tray and brush with olive oil. Bake for 20 minutes, until golden.
