About this recipe:These filo triangles are vegetarian and baked in the oven. They are so easy to do that you can prepare them in a flash when you have unexpected guests... You can also freeze them unbaked, then pop them in the oven straight from the freezer as needed - just increase the cooking time.
1 packet filo pastry
250g frozen spinach, thawed and squeezed dry
250g ricotta cheese
2 teaspoons dried basil
2 tablespoons olive oil
salt and pepper to taste

Preheat oven to 180 C / Gas 4.
Mix the ricotta cheese, spinach, eggs, basil, salt and pepper.
Lay a filo sheet on a work surface, pour a spoonful of the spinach and cheese mixture on it and fold into a triangle. Continue with the remaining ingredients.
Put the triangles on a parchment-lined baking tray and brush with olive oil. Bake for 20 minutes, until golden.
