Blueberry lime jam

    We love blueberries, and they are so good for your health! It is our family's favourite jam. Every year, we pick blueberries, the children help prepare the jam and they are chuffed when we use the pots they made for breakfast !

    Serves: 60 

    • 1kg blueberries, washed
    • 550g caster sugar
    • 2 limes, juice and zest

    1. In a large pot, place the blueberries, sugar, lime zest and juice.
    2. Bring to the boil, stirring gently with a wooden spoon, but do not crush the blueberries. Cook over medium heat for 30 minutes, stirring very often because the jam might otherwise stick to the pan.
    3. Pour a teaspoon of jam onto a cold plate: the jam is done when it wrinkles when pushed with your finger.
    4. Fill jars with the jam (the jars first need to be boiled in hot water to sterilise them), wipe the edges clean and close the jars tightly.
