Chocolate cake with strawberry and mint

    A guaranteed hit! We had to bring something homemade to a picnic... So, I chose a sophisticated chocolate cake! A little bit of strawberry coulis, some mint leaves and voila! The cake plate was empty when I left the picnic!

    • 230g cooking chocolate
    • 5 eggs
    • 80g butter
    • 100ml strawberry coulis
    • 50g plain flour
    • 10 mint leaves, very finely chopped

    1. Preheat the oven to 180 C / Gas 4.
    2. Melt the chocolate in a double boiler over medium heat.
    3. Meanwhile, separate the egg whites from the yolks. Whisk the sugar with the egg yolks until foamy in a bowl. Whisk the egg whites until stiff in another bowl.
    4. Remove the melted chocolate from the double boiler and add the butter. Stir until melted. Stir in the egg yolk mixture, strawberry coulis, flour and then the mint. Gently fold in the egg whites, lift the batter while stirring to keep the batter smooth.
    5. Bake in the oven for 45 minutes. Remove from the oven, turn the cake out of the pan and place it on a rack.

    Strawberry coulis

    To make an easy strawberry coulis, simply chop a punnet of strawberries, mix with 2 tablespoons icing sugar and 1 teaspoon vanilla. Microwave on medium-high heat, stirring regularly until the sauce thickens, about 5 minutes. Blend to a puree in the blender.
