About this recipe:This is a recipe I got from my husband who is the barista at home. We just got an espresso machine and he also chooses the coffee beans very carefully, we usually get arabica. If you don't have an espresso machine at home, you could make with with strong coffee from the cafetiere.
200ml creme fraiche, cold
1 tablespoon vanilla sugar
4 shots of espresso

Heat the milk (steam it, if possible). Meanwhile, whisk the creme fraiche with a hand mixer until stiff.
When you start to get peaks, sprinkle the vanilla sugar over the cream and continue to whisk the cream until firm.
Pour the coffee in a cup then pour the hot milk over the coffee.
Add one to two tablespoons of vanilla whipped cream on top of the coffee.
If unavailable, use a drop of pure vanilla extract instead, with some icing sugar to taste.
