About this recipe: I created this Coq au vin recipe because I have a small garden with lots of herbs, and I love to use them fresh. I cook this dish in the oven because it is quick and healthy. It is delicious with pasta.


Serves: 6 

  • 1 tablespoon oil
  • 2kg whole free range chicken, cut into pieces
  • 30g fresh parsley, minced
  • 10 fresh thyme sprigs, leaves only
  • 2 fresh bay leaves
  • 2 fresh rosemary sprigs, leaves only
  • 2 tablespoons fresh basil, minced
  • 2 tablespoons fresh chervil, minced
  • salt and pepper to taste
  • 5 carrots, sliced
  • 400g small onions (pearl onions), peeled
  • 3 garlic cloves, minced
  • 1 bottle of Burgundy wine

Prep:30min  ›  Cook:1hr30min  ›  Ready in:2hr 

  1. Preheat oven to 170 C / Gas 3.
  2. Add a tablespoon of oil in a frying pan, add the chicken and cook over high heat for 5 minutes or until brown.
  3. In a large baking dish, add the chicken and sprinkle with the herbs, season with salt and pepper.
  4. Add the carrots, whole onions and garlic around the chicken and pour the wine over the chicken. Cover with aluminium foil and bake n the oven for 90 minutes. Check the chicken from time to time and remove the aluminium foil 15 minutes before the end of the cooking time.

mmmm really authentic, lovely dish. I didn't change a thing except for the chervil - didn't have it, so just didn't add it. I'll be making this again - 15 Nov 2012
