Sautéed asparagus with Parmesan


    This is a wonderfully elegant but easy starter made with little more than two ingredients - asparagus and Parmesan cheese. Best to enjoy when asparagus is local and in season. You could also use Pecorino Romano cheese instead.

    Serves: 6 

    • 1 tablespoon olive oil
    • 250g very thin green asparagus, trimmed
    • 1 tablespoon freshly grated Parmesan cheese
    • Sea salt to taste

    1. Heat the olive oil in a frying pan. Sauté the asparagus for 5 minutes over medium to low heat. Sprinkle with sea salt and Parmesan and serve immediately!
