Easy lamb tagine

    Lamb tagine is terrifically warming and elegantly spiced. This is an easy tagine recipe that you can prepare for midweek, or for guests. One pot means there's less washing up! If you do not have a tagine, use a casserole and the end result will still be delicious!

    Serves: 6 

    • 3 tablespoons olive oil
    • 1kg lamb shoulder, cut into pieces
    • 3 onions, minced
    • 5 tomatoes, chopped
    • 2 garlic cloves, minced
    • 2 tablespoons curry powder
    • 1 teaspoon paprika
    • salt and pepper to taste
    • 25g fresh coriander, chopped
    • 150ml creme fraiche

    1. Heat the oil in a large casserole over medium heat. Add the lamb and onions and saute for a few minutes. Stir in the tomatoes, garlic, curry and paprika. Season with salt and pepper. Mix well, add 500ml water and simmer for 75 minutes.
    2. Stir in the coriander and cook for 15 minutes more. Add the creme fraiche to finish, and serve immediately.

    Made this but added some dried apricots, dates and ginger as well as ground coriander and stock. Delicious!  -  10 Jan 2013
