About this recipe: Colombo is a spice mix from the Caribbean, a sort of curry powder. This dish is very easy to make and very tasty. For a balanced dish, serve this Caribbean lamb with a side of boiled potatoes or couscous. Colombo can be found online or in Caribbean markets.


Serves: 6 

  • 1kg lamb shoulder, cubed
  • 4 lemons, juice only
  • 2 garlic cloves, minced
  • 1/2 teaspoon chilli powder
  • 5 thyme sprigs
  • 2 bay leaves
  • salt and pepper to taste
  • 2 onions, minced
  • 100g colombo (Caribbean curry powder)
  • 2 aubergines, diced
  • 2 tablespoons oil

  1. Place lamb in a bowl and marinate for 1 hour in lemon juice, garlic, chilli, thyme, bay leaf, salt and pepper.
  2. Remove the lamb from the marinade. Heat the oil in a pan over medium heat and cook the lamb for 5 minutes, or until browned. Add the onions, Colombo and aubergine, add enough water to cover the meat and simmer for 1 hour. Adjust seasoning and serve hot.
