100g cherry tomatoes

50g roasted, salted cashew nuts
4 slices smoked salmon
1 lemon, juice only

Divide the lamb's lettuce, cherry tomatoes, cashew and pistachio nuts between four serving plates.
Cut the smoked salmon into bite size pieces, then divide between each plate.
Juice the lemon and drizzle each salad with some of the juice. Serve chilled.
