Lamb's lettuce and smoked salmon salad

    This salad is full of vitamins, Omega 3 and lycopene. The dressing is very light, just a squeeze of fresh lemon juice. On top of that, it is delicious and helps get you to your five a day. Serve for a light lunch or a starter.

    Ingredients
    Serves: 4 

    • 80g lamb's lettuce
    • 100g cherry tomatoes
    • 50g roasted, salted pistachio nuts
    • 50g roasted, salted cashew nuts
    • 4 slices smoked salmon
    • 1 lemon, juice only

    Method

    1. Divide the lamb's lettuce, cherry tomatoes, cashew and pistachio nuts between four serving plates.
    2. Cut the smoked salmon into bite size pieces, then divide between each plate.
    3. Juice the lemon and drizzle each salad with some of the juice. Serve chilled.
