About this recipe: A simple but flavourful way to prepare chicken breasts, with the fresh flavour of lime juice. You could also easily use lemon juice in this recipe to great effect. Perfect midweek fare. Serve with white rice or beans or even mange-tout.
If you don't like lime juice then replace with grapefruit juice (take 1/2 grapefruit) or blood orange juice (take a small orange) or lemon juice.
Easy and quick but not a very exiting taste. The lime does not have enough chance to affect the chicken when cooked this way. In addition, the lime reduction is not particularly appetising with the bits of browned chicken in it. If the chicken was marinaded in the lime it might improve it, but that would go against the idea of it being a quick recipe to cook. - 24 Oct 2015
