    About this recipe: This is a wonderful take on a traditional fool, and guests will simply love it. You could use tinned mango if it is out of season, though do be sure to take advantage when mangoes are at their best!

    Ingredients
    Serves: 4 

    • 2 large ripe mangoes, diced
    • 100ml single cream, cold
    • 50g caster sugar
    • 2 teaspoons vanilla extract
    • 200g mascarpone

    Method

    1. Add the mango to a blender or a food processor. Mix until pureed.
    2. Add the cream to a bowl and whisk with an electric mixer until whipped and firm.
    3. Gently stir in the sugar and vanilla extract into the whipped cream.
    4. Mix the whipped cream with the mascarpone.
    5. Add a layer of mascarpone mixture in a glass then a layer of mango puree, top with a layer of mascarpone.

    Big mistake in the ingredients list, you need double cream to whip, single cream will never whip!  -  11 Feb 2017
