This is a colourful fruit salad with fresh pineapple, raspberries, blueberries and red grapes. The fruit is lightly flavoured with maple syrup and vanilla. Serve for a light pudding with ice cream, Greek yoghurt, creme fraiche or whipped cream.

Cut the pineapple into 8 slices and then remove the fibrous core. Cut away the skin and cut into large chunks.
Mix the pineapple with the blueberries and raspberries in a large bowl. Add the grapes.
Pour the maple syrup and vanilla extract over the fruit. Gently mix. Refrigerate for at least 30 minutes.
