Maple fruit salad

    This is a colourful fruit salad with fresh pineapple, raspberries, blueberries and red grapes. The fruit is lightly flavoured with maple syrup and vanilla. Serve for a light pudding with ice cream, Greek yoghurt, creme fraiche or whipped cream.

    • 1 pineapple
    • 500g raspberries
    • 250g blueberries
    • 100g red grapes, seedless
    • 2 tablespoons maple syrup
    • 2 tablespoons vanilla extract
    • 6 fresh mint leaves

    1. Cut the pineapple into 8 slices and then remove the fibrous core. Cut away the skin and cut into large chunks.
    2. Mix the pineapple with the blueberries and raspberries in a large bowl. Add the grapes.
    3. Pour the maple syrup and vanilla extract over the fruit. Gently mix. Refrigerate for at least 30 minutes.
    4. Add the fresh mint leaves just before serving.
