Beef, pork and potato meatballs

    These meatballs are fantastically simple, but really tasty. A great way to use leftover mash. Serve with almost anything, and you can also freeze the meatballs after cooking them.

    Serves: 6 

    • 500g minced beef
    • 500g minced pork
    • 800g potatoes, mashed
    • 2 egg yolks
    • 4 tablespoons plain flour
    • 1 tablespoon oil

    1. Mix the mince in a large bowl with your hands. Add the mashed potatoes and mix till well combined. Season with salt and pepper.
    2. Once this is done, wash your hands thoroughly.
    3. Pour the flour into a plate and add the beaten yolks to a shallow bowl.
    4. Cover your hands with flour then take a spoonful of the meat mixture and roll into a meatball. Put the meatball back into the flour.
    5. Roll in the flour and then into the yolk. Cook the meatballs in a non stick frying pan with 1 tablespoon of oil over medium heat for 10 minutes.
    6. Prepare approximately 2 meatballs per person. Serve with a green salad.


    Add some lightly caramelised minced onion to the meat and it will give a wonderful flavour to the meatballs.

    bringing up my grandsons is sometimes hard to find foods they will eat but they ALWAYS eat meatballs of any description.....these look lovely, and inexpensive too, so tomorrow I shall be off to the shops for the pork mince as I already have beef mince in freezer. I will add some GRATED onion though like I do in everything, as they don't like bits of onion in their food.  -  14 Oct 2013
