Grilled cheesy tuna

    Tuna in a lovely sauce, topped with cheese and grilled till bubbly. This recipe reminds me of my childhood. My mum often made it when she did not have time to cook; it is good and really easy. Now, I'm glad to see that my children enjoy it too!

    Serves: 6 

    • 2 tablespoons olive oil
    • 2 medium onions, diced
    • 1 red pepper, diced
    • 3 large tomatoes, peeled, seeded and diced
    • 1 teaspoon tomato puree
    • 1 teaspoon ketchup
    • 400g tuna chunks in water, drained
    • 1 dried red chilli, crushed
    • 50g fresh parsley, finely chopped
    • salt and pepper to taste
    • 150g grated Gruyere cheese

    1. Add the olive oil to a frying pan, cook the onions over medium heat until brown.
    2. Add the peppers, tomatoes, tomato puree and ketchup, cook for 5 minutes over medium heat.
    3. Stir in the tuna chunks, chilli, parsley, season with salt and pepper, cook for 10 more minutes.
    4. Fill 4 ramekins, sprinkle with the grated cheese.
    5. Turn the grill on high and grill the ramekins for 15 minutes.
