Tuna in a lovely sauce, topped with cheese and grilled till bubbly. This recipe reminds me of my childhood. My mum often made it when she did not have time to cook; it is good and really easy. Now, I'm glad to see that my children enjoy it too!

2 tablespoons olive oil
2 medium onions, diced
1 red pepper, diced
3 large tomatoes, peeled, seeded and diced
1 teaspoon tomato puree
1 teaspoon ketchup
400g tuna chunks in water, drained
1 dried red chilli, crushed
50g fresh parsley, finely chopped
salt and pepper to taste
150g grated Gruyere cheese

Add the olive oil to a frying pan, cook the onions over medium heat until brown.
Add the peppers, tomatoes, tomato puree and ketchup, cook for 5 minutes over medium heat.
Stir in the tuna chunks, chilli, parsley, season with salt and pepper, cook for 10 more minutes.
Fill 4 ramekins, sprinkle with the grated cheese.
Turn the grill on high and grill the ramekins for 15 minutes.
