Baked cauliflower and ham pots

    These delicious baked pots are easy and quick to make and make a lovely starter. These are great during winter for a dinner party, or as a first course for Christmas dinner. Enjoy!

    Serves: 6 

    • 400g cauliflower, cut into florets
    • 150ml single cream
    • 3 eggs
    • 2 tablespoons plain flour
    • 4 tablespoons grated Parmesan cheese
    • salt and pepper to taste
    • 180g ham, diced
    • 6 teaspoons grated Parmesan cheese

    1. Preheat the oven to 180 C / Gas 4.
    2. Cook the cauliflower in salted water in a saucepan over medium heat for 10 minutes or until tender.
    3. Drain and add the cauliflower to the bowl of a food processor. Add the cream, eggs, flour, 4 tablespoons of grated Parmesan, salt and pepper to the bowl. Mix until smooth. Then add the diced ham.
    4. Pour this mixture into the buttered individual ramekins. Sprinkle with 1 teaspoon of grated Parmesan over each ramekin. Bake in the oven for 45 minutes. Serve immediately.
