    About this recipe: A stunning ratatouille made of aubergine, a rainbow of peppers and onions. Enjoy warm or cold, with a lot of good crusty bread and cheese.

    Serves: 4 

    • 1 aubergine, peeled and sliced
    • 2 tablespoons olive oil
    • 1/2 red pepper, diced
    • 1/2 green pepper, diced
    • 1/2 orange pepper, diced
    • 1/2 yellow pepper, diced
    • 3 tablespoons olive oil
    • 1 onion, minced
    • 2 garlic cloves, minced
    • 2 tablespoons tomato puree
    • salt and pepper to taste
    • 1 pinch paprika
    • 10 parsley leaves

    1. Sauté the aubergine in a frying pan with 1 tablespoon oil over medium heat for 10 minutes. Remove from pan and set aside.
    2. Add the peppers to the pan, sauté with 1 tablespoon for 10 minutes. Remove from pan and set aside.
    3. Mince the onion and 2 garlic cloves and sauté in a frying pan with 3 tablespoons olive oil over medium heat for 5 minutes.
    4. Mash the aubergine with a fork then add to the onion mixture along with peppers and tomato puree.
    5. Cook over medium heat for 5 minutes.
    6. Remove from heat, season with salt, pepper, paprika, parsley and stir slowly. Enjoy!
