Nectarine jam

    I can never find nectarine jam in my supermarket, so I always make my own when they are in season. This jam needs to macerate for 12 hours, but other than that it is super easy to make.

    Ingredients
    Serves: 4 

    • 1.5kg nectarines, peeled and diced
    • 1kg jam sugar

    Method
    Prep:20min  ›  Cook:20min  ›  Extra time:12hr marinating  ›  Ready in:12hr40min 

    1. Add the nectarines to a bowl, then add sugar, stir and marinate for 12 hours.
    2. Pour the mixture into a saucepan and cook for 20 minutes over high heat. Pour straight into jars.

    Very easy to make and a lovely aroma and flavour, used regular granulated sugar, added the juice and zest of two lemons as my nectarines were ripe. Reached setting point around fifteen to twenty minutes. Perfect! Forgot to mention I didn't bother to peel the fruit to messy and time consuming, and it turned out perfect.  -  26 Sep 2017
