6 tablespoons lime juice
3 tablespoons rice vinegar
3 teaspoons caster sugar
2 tablespoons oil
salt and pepper to taste
1/2 green chilli, seeded and chopped
5 spring onions, thinly sliced
2 carrots, grated
50g fresh coriander, chopped
1/2 green cabbage, shredded

Prepare the sauce by mixing the lime juice, rice vinegar, sugar and oil in a bowl. Season with salt and pepper.
Add the green chilli, onions, carrots, coriander and cabbage.
Stir well. Refrigerate for 1 hour so all the flavours blend together.
