About this recipe: A quick and easy salad to make, and something different to try with lovely crunchy cabbage. It's a very colourful and refreshing salad, perfect for a dinner in the summertime or for a barbecue.


Serves: 6 

  • 6 tablespoons lime juice
  • 3 tablespoons rice vinegar
  • 3 teaspoons caster sugar
  • 2 tablespoons oil
  • salt and pepper to taste
  • 1/2 green chilli, seeded and chopped
  • 5 spring onions, thinly sliced
  • 2 carrots, grated
  • 50g fresh coriander, chopped
  • 1/2 green cabbage, shredded

Prep:25min  ›  Extra time:1hr chilling  ›  Ready in:1hr25min 

  1. Prepare the sauce by mixing the lime juice, rice vinegar, sugar and oil in a bowl. Season with salt and pepper.
  2. Add the green chilli, onions, carrots, coriander and cabbage.
  3. Stir well. Refrigerate for 1 hour so all the flavours blend together.
